Instructions
- Prepare the kale by washing it thoroughly. Remove the tough stems and tear the leaves into bite-sized pieces. Massage the kale for about two minutes until it softens.
- Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble into bits.
- Chop the apples, leaving the skin on for added texture. Toss them in a squeeze of lemon juice to prevent browning.
- Combine the kale, apples, dried cranberries, nuts, and bacon in a large salad bowl.
- Make the dressing by whisking together the olive oil, apple cider vinegar, mustard, honey, salt, and pepper.
- Toss the salad with the dressing until well-coated, then sprinkle the cheese on top.
- Serve immediately or let it sit for 10-15 minutes for the flavors to meld.
