  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard

Instructions

  1. Prepare the kale by washing it thoroughly. Remove the tough stems and tear the leaves into bite-sized pieces. Massage the kale for about two minutes until it softens.
  2. Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble into bits.
  3. Chop the apples, leaving the skin on for added texture. Toss them in a squeeze of lemon juice to prevent browning.
  4. Combine the kale, apples, dried cranberries, nuts, and bacon in a large salad bowl.
  5. Make the dressing by whisking together the olive oil, apple cider vinegar, mustard, honey, salt, and pepper.
