Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ¼ cup granulated sugar (for crust)
  • 1 egg yolk
  • 34 tablespoons cold water
  • 2 cups fresh raspberries
  • 8 ounces white chocolate, chopped
  • 1 cup heavy cream
  • 2 tablespoons sugar (for filling)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the flour, sugar, and cold butter. Using a pastry cutter or your fingertips, mix until it resembles coarse crumbs.
  3. Add in the egg yolk and cold water, mixing gently until the dough comes together. Wrap and chill for about 30 minutes.
  4. On a floured surface, roll out the chilled dough into a circle large enough to fit your tart pan. Press the dough into the pan and pierce the bottom with a fork to prevent bubbling.
  5. Bake the crust for 20-25 minutes or until golden. Allow it to cool completely before filling.
  6. While the crust cools, heat the heavy cream in a small saucepan over medium heat until simmering.
  7. Remove from heat and add the chopped white chocolate, stirring until melted and smooth.
  8. Stir in the sugar and vanilla extract until well combined.
  9. Once the filling cools slightly, gently fold in the raspberries, ensuring they are evenly distributed.
  10. Pour the raspberry-white chocolate filling into the cooled tart shell, smoothing the top.
  11. Refrigerate for at least 2 hours, or until set.
  12. When ready to serve, garnish with a few fresh raspberries and perhaps a dusting of powdered sugar. Slice into wedges and enjoy!

Notes

Ensure the butter for your crust is cold for a flaky texture. Don’t skip the chilling step!
