- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and cubed
- ¼ cup granulated sugar (for crust)
- 1 egg yolk
- 3–4 tablespoons cold water
- 2 cups fresh raspberries
- 8 ounces white chocolate, chopped
- 1 cup heavy cream
- 2 tablespoons sugar (for filling)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the flour, sugar, and cold butter. Using a pastry cutter or your fingertips, mix until it resembles coarse crumbs.
- Add in the egg yolk and cold water, mixing gently until the dough comes together. Wrap and chill for about 30 minutes.
- On a floured surface, roll out the chilled dough into a circle large enough to fit your tart pan. Press the dough into the pan and pierce the bottom with a fork to prevent bubbling.
- Bake the crust for 20-25 minutes or until golden. Allow it to cool completely before filling.
- While the crust cools, heat the heavy cream in a small saucepan over medium heat until simmering.
- Remove from heat and add the chopped white chocolate, stirring until melted and smooth.
- Stir in the sugar and vanilla extract until well combined.
- Once the filling cools slightly, gently fold in the raspberries, ensuring they are evenly distributed.
- Pour the raspberry-white chocolate filling into the cooled tart shell, smoothing the top.
- Refrigerate for at least 2 hours, or until set.
- When ready to serve, garnish with a few fresh raspberries and perhaps a dusting of powdered sugar. Slice into wedges and enjoy!
Notes
Ensure the butter for your crust is cold for a flaky texture. Don’t skip the chilling step!
