Ingredients

  • 3 ½ cups all-purpose flour
  • 1 packet instant yeast
  • 1 cup whole milk (or almond/oat milk)
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • ½ cup unsweetened cocoa powder
  • 1 cup semi-sweet or dark chocolate, chopped
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

  1. Prepare the dough: In a mixing bowl, combine the flour, sugar, and salt. In a separate bowl, whisk the warm milk and melted butter, then add the eggs and vanilla. Slowly combine the wet ingredients with the dry. Mix until a sticky dough forms.
  2. Knead for about 8-10 minutes until silky and smooth.
  3. Let it rise: Transfer the dough to a lightly greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1-2 hours or until doubled in size.
  4. Make the filling: While the dough rises, melt your chocolate. Mix in the cocoa powder and a touch of sugar.
  5. Shape the babka: Roll the dough into a rectangle, spread the chocolate filling, and roll it tightly.
  6. Twist the rolled dough in half lengthwise, exposing the chocolate swirls, and twist the two halves together.
  7. Final rise: Place it in a greased loaf pan and let it rise for another 30-45 minutes.
  8. Bake: Preheat your oven to 350°F (175°C) and bake for 30-35 minutes or until golden brown.
  9. Glaze it: Melt sugar and water for the glaze and brush it over the babka after baking.
  10. Cool and enjoy: Let the babka cool before slicing and serving.
