- 3 ½ cups all-purpose flour
- 1 packet instant yeast
- 1 cup whole milk (or almond/oat milk)
- ½ cup granulated sugar
- 2 large eggs
- ½ cup unsalted butter, melted
- ½ cup unsweetened cocoa powder
- 1 cup semi-sweet or dark chocolate, chopped
- 1 tsp vanilla extract
- ½ tsp salt
Instructions
- Prepare the dough: In a mixing bowl, combine the flour, sugar, and salt. In a separate bowl, whisk the warm milk and melted butter, then add the eggs and vanilla. Slowly combine the wet ingredients with the dry. Mix until a sticky dough forms.
- Knead for about 8-10 minutes until silky and smooth.
- Let it rise: Transfer the dough to a lightly greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1-2 hours or until doubled in size.
- Make the filling: While the dough rises, melt your chocolate. Mix in the cocoa powder and a touch of sugar.
- Shape the babka: Roll the dough into a rectangle, spread the chocolate filling, and roll it tightly.
- Twist the rolled dough in half lengthwise, exposing the chocolate swirls, and twist the two halves together.
- Final rise: Place it in a greased loaf pan and let it rise for another 30-45 minutes.
- Bake: Preheat your oven to 350°F (175°C) and bake for 30-35 minutes or until golden brown.
- Glaze it: Melt sugar and water for the glaze and brush it over the babka after baking.
- Cool and enjoy: Let the babka cool before slicing and serving.
