Description
A luxurious layered dessert featuring almond sponge cake soaked in coffee syrup, coffee buttercream, and dark chocolate ganache.

- 1 cup almond flour
- 4 large eggs
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup strong brewed coffee or espresso
- 6 oz dark chocolate, chopped
- 1 tsp vanilla extract
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine almond flour and granulated sugar in a mixing bowl.
- Whisk eggs in a separate bowl until frothy, then add to the almond flour, mixing until well combined.
- Pour the batter onto the prepared baking sheet and bake for 10-12 minutes until golden.
- Make the coffee syrup by combining brewed coffee and sugar in a saucepan over low heat until dissolved. Let cool.
- Beat softened butter until creamy, then gradually add powdered sugar and mix in coffee for the buttercream.
- Heat heavy cream until just before boiling, pour over chopped dark chocolate, and whisk until smooth for the ganache.
- Cut the cooled sponge into three rectangles, then layer with coffee syrup, buttercream, and ganache.
- Let the assembled cake set in the fridge for at least 1 hour before serving.
- Garnish with crushed almonds or chocolate shavings before serving.
Notes
The cake tastes better if made a day in advance. Store wrapped in plastic wrap or air-tight container.
