Description

A luxurious layered dessert featuring almond sponge cake soaked in coffee syrup, coffee buttercream, and dark chocolate ganache.


Ingredients

  • 1 cup almond flour
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup strong brewed coffee or espresso
  • 6 oz dark chocolate, chopped
  • 1 tsp vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine almond flour and granulated sugar in a mixing bowl.
  3. Whisk eggs in a separate bowl until frothy, then add to the almond flour, mixing until well combined.
  4. Pour the batter onto the prepared baking sheet and bake for 10-12 minutes until golden.
  5. Make the coffee syrup by combining brewed coffee and sugar in a saucepan over low heat until dissolved. Let cool.
  6. Beat softened butter until creamy, then gradually add powdered sugar and mix in coffee for the buttercream.
  7. Heat heavy cream until just before boiling, pour over chopped dark chocolate, and whisk until smooth for the ganache.
  8. Cut the cooled sponge into three rectangles, then layer with coffee syrup, buttercream, and ganache.
  9. Let the assembled cake set in the fridge for at least 1 hour before serving.
  10. Garnish with crushed almonds or chocolate shavings before serving.

Notes

The cake tastes better if made a day in advance. Store wrapped in plastic wrap or air-tight container.
