  • 250ml heavy cream
  • 100g corn syrup
  • 10g gelatin
  • 50ml water

Instructions

  1. Bake the cake using your preferred recipe and let it cool completely.
  2. Prepare the glaze by blooming the gelatin in cold water for 5-10 minutes.
  3. Heat the heavy cream and corn syrup in a saucepan until just simmering, then remove from heat.
  4. Add the chopped dark chocolate to the cream, stirring until smooth.
  5. Mix in the bloomed gelatin until fully dissolved.
  6. Cool the glaze until it’s warm but pourable.
  7. Pour the glaze over the center of the cooled cake placed on a wire rack.
  8. Set the glaze for about 10 minutes before serving.
