- 10g gelatin
- 50ml water
Instructions

- Prepare the glaze by blooming the gelatin in cold water for 5-10 minutes.
- Heat the heavy cream and corn syrup in a saucepan until just simmering, then remove from heat.
- Add the chopped dark chocolate to the cream, stirring until smooth.
- Mix in the bloomed gelatin until fully dissolved.
- Cool the glaze until it’s warm but pourable.
- Pour the glaze over the center of the cooled cake placed on a wire rack.
- Set the glaze for about 10 minutes before serving.
- Decorate with fresh berries or edible flowers, if desired.
