- 8 oz Fettuccine or Tagliatelle pasta
- 1 lb steak (sirloin or ribeye)
- 1 cup heavy cream
- 3 cloves garlic, minced
- 8 oz cremini or shiitake mushrooms, sliced
- 1 onion, chopped
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp fresh herbs (chives, parsley, or thyme)
- 2 tbsp olive oil
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Cook the pasta: Boil a pot of salted water, add pasta, and cook until al dente. Reserve 1 cup of pasta water before draining.
- Sear the steak: Heat a skillet over medium-high heat, add olive oil and butter, season steak with salt and pepper, sear for 3-4 minutes on each side, then rest and slice.
- Sauté aromatics: In the same skillet, add olive oil, onion, and garlic, and sauté until fragrant and translucent (2-3 minutes).
- Add mushrooms: Stir in sliced mushrooms and cook until tender and golden brown (about 5 minutes).
- Create the sauce: Reduce heat to medium-low, stir in heavy cream, and let simmer. Grate in Parmesan cheese and mix until smooth.
- Combine everything: Add sliced steak and cooked pasta to the skillet, tossing to combine. Add reserved pasta water as needed, then mix in fresh herbs and adjust seasoning.
- Serve and enjoy: Plate the pasta, garnish with additional Parmesan and fresh herbs.
Notes
For lighter options, substitute half-and-half or Greek yogurt for heavy cream. You can also use chicken or shrimp instead of steak.
