- 1 can coconut milk
- 3 cloves fresh garlic, minced
- 1 onion, diced
- 1 inch fresh ginger, minced
- 4 cups chicken or vegetable broth
- 2 carrots, chopped
- 1 cup mushrooms, chopped
- 1 teaspoon fresh thyme
- 1 tablespoon fresh parsley, chopped
- Juice of 1 lime
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat a tablespoon of olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until fragrant, about 3-4 minutes.
- Add chicken pieces and cook until golden brown, about 5-7 minutes, turning occasionally.
- Introduce chopped carrots and mushrooms, sauté for another 4-5 minutes.
- Pour in broth and let everything merge for about 15 minutes, checking periodically.
- Remove chicken, shred it, and return to the pot.
- Whisk in coconut milk and let it simmer for 5 minutes, adjusting seasoning as needed.
- Finish with lime juice and sprinkle freshly chopped herbs before serving.
Notes
For a vegetarian option, substitute chicken with tofu or chickpeas. This soup can be thickened with cornstarch if desired.
