  • 1 onion, diced
  • 1 inch fresh ginger, minced
  • 4 cups chicken or vegetable broth
  • 2 carrots, chopped
  • 1 cup mushrooms, chopped
  • 1 teaspoon fresh thyme
  • 1 tablespoon fresh parsley, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat a tablespoon of olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until fragrant, about 3-4 minutes.
  2. Add chicken pieces and cook until golden brown, about 5-7 minutes, turning occasionally.
  3. Introduce chopped carrots and mushrooms, sauté for another 4-5 minutes.
  4. Pour in broth and let everything merge for about 15 minutes, checking periodically.
  5. Remove chicken, shred it, and return to the pot.
  6. Whisk in coconut milk and let it simmer for 5 minutes, adjusting seasoning as needed.
  7. Finish with lime juice and sprinkle freshly chopped herbs before serving.

Notes

For a vegetarian option, substitute chicken with tofu or chickpeas. This soup can be thickened with cornstarch if desired.
