Ingredients

  • Boneless, skinless chicken thighs or breasts
  • 1/2 cup honey
  • 23 chipotle peppers in adobo sauce, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Salt, to taste
  • Pepper, to taste
  • Optional: paprika

Instructions

  1. Pat the chicken dry with paper towels.
  2. In a small bowl, whisk together honey, minced garlic, chipotle peppers, lime juice, olive oil, salt, and pepper.
  3. Place the chicken in a bowl or zip-top bag and pour the marinade over it. Marinate for at least 30 minutes.
  4. Preheat a skillet over medium-high heat and add olive oil.
  5. Sear the chicken for about 5-7 minutes on each side until cooked through (internal temperature should be 165°F).
  6. Remove from heat and let the chicken rest before slicing.
  7. Serve on a platter garnished with fresh cilantro.
