- Boneless, skinless chicken thighs or breasts
- 1/2 cup honey
- 2–3 chipotle peppers in adobo sauce, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Juice of 1 lime
- Salt, to taste
- Pepper, to taste
- Optional: paprika
Instructions
- Pat the chicken dry with paper towels.
- In a small bowl, whisk together honey, minced garlic, chipotle peppers, lime juice, olive oil, salt, and pepper.
- Place the chicken in a bowl or zip-top bag and pour the marinade over it. Marinate for at least 30 minutes.
- Preheat a skillet over medium-high heat and add olive oil.
- Sear the chicken for about 5-7 minutes on each side until cooked through (internal temperature should be 165°F).
- Remove from heat and let the chicken rest before slicing.
- Serve on a platter garnished with fresh cilantro.
Notes
For a vegan option, substitute chicken with jackfruit or tofu. This dish pairs well with rice, tortillas, or a fresh salad.
