Ingredients

  • 1 cup Arborio rice
  • 2 cups fresh mushrooms (button and cremini)
  • 2 cloves garlic, minced
  • 1 shallot, diced
  • 4 cups vegetable or chicken broth
  • 1/2 cup Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a saucepan over medium heat and add minced garlic and shallots. Cook until fragrant.
  2. Pour in the Arborio rice, stirring for a couple of minutes until slightly translucent.
  3. Start adding your warm broth one ladle at a time, allowing the rice to soak it up completely before adding the next.
  4. Keep stirring gently to release the starches, which will add creaminess.
  5. Once the rice is al dente, stir in your butter and Parmesan for that irresistible creaminess.
  6. Season with salt and pepper before serving.

Notes

For a vegan option, swap Parmesan for nutritional yeast and butter for vegan butter.
