Ingredients

- 1 cup Arborio rice
- 2 cups fresh mushrooms (button and cremini)
- 2 cloves garlic, minced
- 1 shallot, diced
- 4 cups vegetable or chicken broth
- 1/2 cup Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a saucepan over medium heat and add minced garlic and shallots. Cook until fragrant.
- Pour in the Arborio rice, stirring for a couple of minutes until slightly translucent.
- Start adding your warm broth one ladle at a time, allowing the rice to soak it up completely before adding the next.
- Keep stirring gently to release the starches, which will add creaminess.
- Once the rice is al dente, stir in your butter and Parmesan for that irresistible creaminess.
- Season with salt and pepper before serving.
Notes
For a vegan option, swap Parmesan for nutritional yeast and butter for vegan butter.
