- 1 cup unsalted butter, room temperature
- 3/4 cup granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- Jam or preserves (raspberry, strawberry, or apricot)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter and sugar until light and fluffy.
- Add the egg yolk and vanilla extract and stir until well combined.
- Gradually add the flour and mix until just combined.
- If the dough is too soft, chill in the refrigerator for 30 minutes.
- Roll the dough into small balls, flatten each, and press your thumb to create an indentation.
- Place a small dollop of jam in the center of each cookie.
- Bake for 12-15 minutes until edges are light golden.
- Let cool on the baking sheet for a couple of minutes before transferring to a wire rack.
Notes
Chill the dough if it’s too soft to handle. Be cautious not to overbake the cookies.
