Description

A comforting dish that combines tender shredded barbecue chicken with velvety creamy grits, perfect for family gatherings.

Ingredients

Scale
  • 2 boneless chicken breasts or thighs
  • 1 cup barbecue sauce
  • 1 cup stone-ground or quick-cooking grits
  • 4 cups chicken broth
  • 1/4 cup butter
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Pinch of cayenne (optional)

Instructions

  1. Season chicken with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium heat, sear chicken until golden brown, about 5 minutes per side.
  2. Add barbecue sauce, cover, and simmer for 15-20 minutes until chicken is cooked through. Shred chicken and mix back in the sauce.
  3. In a medium saucepan, boil chicken broth. Gradually whisk in grits, reduce heat, cover, and simmer for 20-25 minutes, stirring occasionally.
  4. Stir in butter and heavy cream, season with salt and pepper until creamy consistency is achieved.
  5. To serve, plate with creamy grits topped with shredded barbecue chicken.

Notes

For a vegetarian option, substitute chicken with tofu or seitan. For creamier grits, adjust liquid as needed.
