Ingredients

  • 2 cups Fresh Broccoli florets
  • 8 oz Penne or Fusilli Pasta
  • 1 cup Heavy Cream
  • 2 cups Chicken Broth
  • 2 cloves Garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • Salt and Pepper to taste

Instructions

  1. Sauté minced garlic in a large pot over medium heat until fragrant, about 1 minute.
  2. Add shredded rotisserie chicken and stir to combine for a couple of minutes.
  3. Pour in chicken broth and heavy cream, bringing it to a gentle simmer.
  4. Stir in broccoli florets and uncooked pasta, ensuring everything is well coated.
  5. Cover and let simmer until the pasta is al dente, about 10-12 minutes, stirring occasionally.
  6. Stir in grated Parmesan cheese, adjusting seasoning with salt and pepper as needed.
  7. Serve immediately, garnished with additional cheese and herbs if desired.

Notes

For a vegetarian option, use chickpeas instead of chicken and coconut cream instead of heavy cream.
