Description
Delicious roasted sweet potato rounds drizzled with honey and topped with crumbled feta cheese and fresh thyme.

- 2 medium sweet potatoes
- 1/2 cup crumbled feta cheese
- 2 tablespoons honey
- 2 tablespoons fresh thyme
- 2 tablespoons extra virgin olive oil
- Sea salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then slice them into even rounds (about ½ inch thick).
- In a large bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
- Arrange the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
- Roast for about 25–30 minutes, flipping halfway through for even browning.
- Five minutes before they’re done, drizzle honey over the rounds and sprinkle feta cheese on top.
- Return to the oven until the feta is warmed.
- Sprinkle with fresh thyme before serving.
- Let cool slightly before serving warm as a side dish or light meal.
Notes
For extra flavor, consider adding red pepper flakes before roasting or serve with a sprinkle of flaky sea salt on top.
