Description

Delicious roasted sweet potato rounds drizzled with honey and topped with crumbled feta cheese and fresh thyme.


Ingredients

  • 2 medium sweet potatoes
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons honey
  • 2 tablespoons fresh thyme
  • 2 tablespoons extra virgin olive oil
  • Sea salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then slice them into even rounds (about ½ inch thick).
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
  4. Arrange the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
  5. Roast for about 25–30 minutes, flipping halfway through for even browning.
  6. Five minutes before they’re done, drizzle honey over the rounds and sprinkle feta cheese on top.
  7. Return to the oven until the feta is warmed.
  8. Sprinkle with fresh thyme before serving.
  9. Let cool slightly before serving warm as a side dish or light meal.

Notes

For extra flavor, consider adding red pepper flakes before roasting or serve with a sprinkle of flaky sea salt on top.
