Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tbsp unsweetened cocoa powder
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • Red food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, and baking soda, then set aside.
  3. In another bowl, mix together the oil and sugar until well combined. Add the eggs, buttermilk, and vanilla extract, mixing well.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Add red food coloring until you reach your desired shade.
  6. Pour the batter evenly into the cupcake liners, filling them about two-thirds of the way.
  7. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. In a mixing bowl, beat softened cream cheese and butter together until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until fluffy.
  10. Once cool, pipe or spread frosting on top of the cupcakes.
