- 1 1/2 cups granulated sugar
- 1 tbsp unsweetened cocoa powder
- 1 cup buttermilk
- 1 cup vegetable oil
- 2 large eggs
- 1 tsp baking soda
- 1 tsp white vinegar
- 1 tsp vanilla extract
- Red food coloring
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
- In a large mixing bowl, whisk together the flour, cocoa powder, and baking soda, then set aside.
- In another bowl, mix together the oil and sugar until well combined. Add the eggs, buttermilk, and vanilla extract, mixing well.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Add red food coloring until you reach your desired shade.
- Pour the batter evenly into the cupcake liners, filling them about two-thirds of the way.
- Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- In a mixing bowl, beat softened cream cheese and butter together until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until fluffy.
- Once cool, pipe or spread frosting on top of the cupcakes.
Notes
Use room temperature ingredients for the best results. Avoid overmixing for a light texture.
