Description

A comforting soup made with tiny pasta, fresh vegetables, and herbs, perfect for chilly evenings and family gatherings.


Ingredients

  • 1 cup pastina pasta
  • 4 cups vegetarian broth or chicken broth
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • Fresh herbs (parsley, basil, or thyme)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until soft, about 3-5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in chopped carrots and celery, cooking for around 5 minutes until slightly tender.
  4. Add broth and bring to a gentle simmer. Season with salt, pepper, and fresh herbs.
  5. Once simmering, add pastina and cook for 5-7 minutes until tender.
  6. Stir in more fresh herbs and adjust seasonings as needed.
  7. Ladle the soup into bowls and finish with a drizzle of olive oil and grated Parmesan cheese if desired.

Notes

Feel free to substitute pastina with any small pasta shape or quinoa for a gluten-free option.
