Ingredients

- 1 cup pastina pasta
- 4 cups vegetarian broth or chicken broth
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 stalks celery, chopped
- Fresh herbs (parsley, basil, or thyme)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions and sauté until soft, about 3-5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Stir in chopped carrots and celery, cooking for around 5 minutes until slightly tender.
- Add broth and bring to a gentle simmer. Season with salt, pepper, and fresh herbs.
- Once simmering, add pastina and cook for 5-7 minutes until tender.
- Stir in more fresh herbs and adjust seasonings as needed.
- Ladle the soup into bowls and finish with a drizzle of olive oil and grated Parmesan cheese if desired.
Notes
Feel free to substitute pastina with any small pasta shape or quinoa for a gluten-free option.
