Ingredients

- 2 lbs beef chuck roast, cut into cubes
- 1 large onion, diced
- 4 cloves garlic, minced
- 3 carrots, sliced
- 4 medium Yukon Gold potatoes, cubed
- 2 stalks celery, diced
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Season beef cubes generously with salt and pepper.
- In a large pot, heat olive oil over medium-high heat. Sear beef in batches until browned, then remove and set aside.
- Add onions, carrots, celery, and garlic to the pot, and sauté for about 5 minutes until soft.
- Return the beef to the pot; add potatoes, tomato paste, thyme, and bay leaves.
- Pour in beef broth until ingredients are submerged. Bring to a gentle boil.
- Cover and reduce heat to low. Simmer for at least 2 hours, stirring occasionally.
- Adjust seasoning to taste and add more broth or water if too thick.
Notes
This stew can be served over mashed potatoes or with crusty bread. Leftovers can be frozen for up to three months.
