Ingredients

  • Boneless chicken (breast or thighs)
  • 1 onion, sautéed
  • 1 cup mushrooms, sautéed
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups milk (for cream sauce)
  • 2 tablespoons butter (for cream sauce)
  • 2 tablespoons flour (for cream sauce)
  • Fresh basil, oregano, and parsley
  • Salt and pepper to taste
  • A pinch of nutmeg
  • Oven-ready lasagna noodles

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook the chicken in a skillet over medium-high heat until no longer pink, then shred.
  3. Sauté onions and mushrooms in the same skillet until soft.
  4. In a separate pot, prepare the cream sauce by melting butter, adding flour for a roux, and whisking in milk. Season with salt, pepper, and nutmeg.
  5. Start layering: cream sauce, noodles, chicken, sautéed vegetables, ricotta, mozzarella, and cream sauce. Repeat layers, finishing with noodles topped with cream sauce and mozzarella.
  6. Cover with foil, bake for 30 minutes, then remove foil and bake for an additional 15-20 minutes.
  7. Let sit for 10-15 minutes before slicing to allow it to set.

Notes

For a lighter option, substitute cottage cheese for ricotta. Allowing the lasagna to rest after baking prevents it from being soupy when sliced.
