- Boneless chicken (breast or thighs)
- 1 onion, sautéed
- 1 cup mushrooms, sautéed
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 cups milk (for cream sauce)
- 2 tablespoons butter (for cream sauce)
- 2 tablespoons flour (for cream sauce)
- Fresh basil, oregano, and parsley
- Salt and pepper to taste
- A pinch of nutmeg
- Oven-ready lasagna noodles
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook the chicken in a skillet over medium-high heat until no longer pink, then shred.
- Sauté onions and mushrooms in the same skillet until soft.
- In a separate pot, prepare the cream sauce by melting butter, adding flour for a roux, and whisking in milk. Season with salt, pepper, and nutmeg.
- Start layering: cream sauce, noodles, chicken, sautéed vegetables, ricotta, mozzarella, and cream sauce. Repeat layers, finishing with noodles topped with cream sauce and mozzarella.
- Cover with foil, bake for 30 minutes, then remove foil and bake for an additional 15-20 minutes.
- Let sit for 10-15 minutes before slicing to allow it to set.
Notes
For a lighter option, substitute cottage cheese for ricotta. Allowing the lasagna to rest after baking prevents it from being soupy when sliced.
