Ingredients

- 4 Yukon Gold or Russet potatoes, peeled and diced
- 1 large yellow onion, finely chopped
- 4 cups vegetable or chicken broth
- 3 garlic cloves, minced
- 1/2 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary
- Salt and pepper to taste
- Optional toppings: crispy bacon, sour cream, fresh herbs, grated cheese
Instructions
- Prep your ingredients by peeling and chopping the potatoes into 1-inch cubes, dicing the onion, and mincing the garlic.
- In a skillet, sauté onions and garlic in butter until soft and fragrant, about 5 minutes.
- Add the potatoes, sautéed onions and garlic to the crockpot. Pour in the broth and sprinkle with herbs, salt, and pepper.
- Cook on low for 6-8 hours or on high for 4 hours.
- Blend the soup until smooth with an immersion blender or in batches in a standing blender. Stir in heavy cream just before serving.
- Ladle into bowls and garnish with toppings of your choice. Serve and enjoy!
Notes
For a lighter version, substitute heavy cream with Greek yogurt or coconut milk. You can also experiment with additional ingredients like mushrooms or chives.
