Description

A comforting and creamy potato soup made in a slow cooker, perfect for cozy family gatherings.


Ingredients

  • 4 Yukon Gold or Russet potatoes, peeled and diced
  • 1 large yellow onion, finely chopped
  • 4 cups vegetable or chicken broth
  • 3 garlic cloves, minced
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • Salt and pepper to taste
  • Optional toppings: crispy bacon, sour cream, fresh herbs, grated cheese

Instructions

  1. Prep your ingredients by peeling and chopping the potatoes into 1-inch cubes, dicing the onion, and mincing the garlic.
  2. In a skillet, sauté onions and garlic in butter until soft and fragrant, about 5 minutes.
  3. Add the potatoes, sautéed onions and garlic to the crockpot. Pour in the broth and sprinkle with herbs, salt, and pepper.
  4. Cook on low for 6-8 hours or on high for 4 hours.
  5. Blend the soup until smooth with an immersion blender or in batches in a standing blender. Stir in heavy cream just before serving.
  6. Ladle into bowls and garnish with toppings of your choice. Serve and enjoy!

Notes

For a lighter version, substitute heavy cream with Greek yogurt or coconut milk. You can also experiment with additional ingredients like mushrooms or chives.
