Ingredients

  • 1 pound lean ground beef
  • 2 cups mashed potatoes
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté finely chopped onions and minced garlic in olive oil over medium heat until soft and fragrant, about 5 minutes.
  3. In a large mixing bowl, combine ground beef, sautéed onions, mashed potatoes, egg, breadcrumbs, salt, pepper, thyme, and Worcestershire sauce. Mix gently with your hands.
  4. Transfer the mixture onto a parchment-lined baking sheet or into a loaf pan and shape into a loaf.
  5. Bake for 45-50 minutes or until the internal temperature reads 160°F (70°C).
  6. Allow the meatloaf to rest for 10 minutes before slicing. Serve hot.

Notes

Brush a light layer of ketchup or barbecue sauce on top before baking for added flavor. Avoid over-mixing the meat mixture to prevent a dense texture.
