- 6 large eggs
- 1 cup milk or cream
- 4 cups day-old bread (sourdough or challah)
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled bacon or sausage
- 1 cup diced bell peppers or fresh spinach
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh herbs (chives or parsley) for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Cube the bread into bite-sized pieces and place them in a greased 9×13-inch baking dish.
- Cook the bacon or sausage in a skillet until crispy, then drain and scatter over the bread.
- Sauté diced onions and mushrooms in the same skillet until golden brown. Add spinach last and cook until wilted.
- In a large bowl, whisk together eggs, milk, salt, pepper, and herbs until well combined.
- Pour the egg mixture over the bread and protein, and gently mix.
- Sprinkle cheese on top.
- Bake for about 40-50 minutes, or until the top is golden and the egg is set.
- Let cool for 10 minutes before serving.
Notes
Experiment with different proteins and vegetables to customize your casserole. Letting the mixture sit for 15-30 minutes before baking allows flavors to meld.
