Description

Ingredients

  • 6 large eggs
  • 1 cup milk or cream
  • 4 cups day-old bread (sourdough or challah)
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon or sausage
  • 1 cup diced bell peppers or fresh spinach
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh herbs (chives or parsley) for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cube the bread into bite-sized pieces and place them in a greased 9×13-inch baking dish.
  3. Cook the bacon or sausage in a skillet until crispy, then drain and scatter over the bread.
  4. Sauté diced onions and mushrooms in the same skillet until golden brown. Add spinach last and cook until wilted.
  5. In a large bowl, whisk together eggs, milk, salt, pepper, and herbs until well combined.
  6. Pour the egg mixture over the bread and protein, and gently mix.
  7. Sprinkle cheese on top.
  8. Bake for about 40-50 minutes, or until the top is golden and the egg is set.
  9. Let cool for 10 minutes before serving.

Notes
