- 4 cups hash browns (freshly grated preferred)
- 6 large eggs
- 1 cup cheddar cheese (shredded)
- 1/2 cup milk or cream
- 1/2 cup chopped onions
- 1/2 cup bell peppers (chopped)
- 1 cup spinach (chopped)
- 1/2 pound sausage or bacon (optional)
- Salt, pepper, garlic powder, and fresh herbs to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, sauté your vegetables (onions, bell peppers, mushrooms) in a dash of olive oil until they’re tender, about 5-7 minutes.
- In a large bowl, whisk together the eggs, milk, and spices.
- Add the sautéed vegetables, hash browns, and half of your cheese to the egg mixture. Stir until well combined.
- Pour the mixture into a greased casserole dish and sprinkle the remaining cheese on top.
- Bake in the preheated oven for about 45 minutes, or until the casserole is golden brown and the center is set.
- Remove it from the oven and let it cool for a few minutes.
- Serve warm, garnished with fresh herbs.
Notes
You can assemble the casserole the night before and refrigerate it. Bake it in the morning while brewing your coffee for convenience.
