Description

A delicious breakfast casserole featuring crispy hash browns, creamy eggs, and a medley of colorful vegetables, perfect for family gatherings or brunch.


Ingredients

  • 4 cups hash browns (freshly grated preferred)
  • 6 large eggs
  • 1 cup cheddar cheese (shredded)
  • 1/2 cup milk or cream
  • 1/2 cup chopped onions
  • 1/2 cup bell peppers (chopped)
  • 1 cup spinach (chopped)
  • 1/2 pound sausage or bacon (optional)
  • Salt, pepper, garlic powder, and fresh herbs to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, sauté your vegetables (onions, bell peppers, mushrooms) in a dash of olive oil until they’re tender, about 5-7 minutes.
  3. In a large bowl, whisk together the eggs, milk, and spices.
  4. Add the sautéed vegetables, hash browns, and half of your cheese to the egg mixture. Stir until well combined.
  5. Pour the mixture into a greased casserole dish and sprinkle the remaining cheese on top.
  6. Bake in the preheated oven for about 45 minutes, or until the casserole is golden brown and the center is set.
  7. Remove it from the oven and let it cool for a few minutes.
  8. Serve warm, garnished with fresh herbs.

Notes

You can assemble the casserole the night before and refrigerate it. Bake it in the morning while brewing your coffee for convenience.
