  • 1 cup mushrooms, sliced (cremini or button)
  • 1/2 cup onions, diced
  • 1/2 cup celery, diced
  • 1/4 cup fresh herbs (thyme, sage, or parsley)
  • 2 cups chicken or vegetable broth
  • 1/2 cup butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cube the day-old bread and place it in a large bowl. If not stale, toast in the oven until dried out.
  3. In a large skillet, melt butter over medium heat. Add onions and celery, sautéing until soft (about 5-7 minutes).
  4. Add mushrooms and cook until browned and tender.
  5. Toss in cranberries, apples, and fresh herbs. Cook for an additional 2-3 minutes.
  6. Pour in the broth gradually, mixing until evenly moistened. Adjust seasoning to taste.
  7. Transfer the mixture to a greased baking dish and bake uncovered for 30-35 minutes until golden brown.
