- 6 cups day-old bread, cubed (sourdough or whole grain)
- 1 cup fresh cranberries
- 2 medium apples, diced (Honeycrisp or Fuji)
- 1 cup mushrooms, sliced (cremini or button)
- 1/2 cup onions, diced
- 1/2 cup celery, diced
- 1/4 cup fresh herbs (thyme, sage, or parsley)
- 2 cups chicken or vegetable broth
- 1/2 cup butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- Cube the day-old bread and place it in a large bowl. If not stale, toast in the oven until dried out.
- In a large skillet, melt butter over medium heat. Add onions and celery, sautéing until soft (about 5-7 minutes).
- Add mushrooms and cook until browned and tender.
- Toss in cranberries, apples, and fresh herbs. Cook for an additional 2-3 minutes.
- Pour in the broth gradually, mixing until evenly moistened. Adjust seasoning to taste.
- Transfer the mixture to a greased baking dish and bake uncovered for 30-35 minutes until golden brown.
Notes
For a gluten-free option, use gluten-free bread. Feel free to experiment with seasonal vegetables or add nuts like chopped pecans or walnuts.
