- 1 lb white fish (cod or tilapia) or shrimp
- 1 can (14 oz) full-fat coconut milk
- 1 cup seafood broth or vegetable broth
- 1 cup chopped onions
- 3 cloves minced garlic
- Juice and zest of 2 fresh limes
- 1/2 cup fresh cilantro, chopped
- Chili paste or fresh chili (to taste)
Instructions
- Sauté minced garlic and chopped onions in a large pot over medium heat until fragrant, about 3-5 minutes.
- Pour in the coconut milk and broth, mixing well. Allow to simmer gently for 10-15 minutes.
- Add the fish or shrimp to the pot and cook for 5-7 minutes until opaque and tender.
- Stir in lime juice, zest, and cilantro. Adjust seasoning with salt and pepper as needed.
- Ladle soup into warm bowls, garnishing with extra cilantro and lime wedges.
Notes
Ensure not to overcook the fish to keep it tender. Adjust flavors by adding more lime or coconut as per preference.
