- Brussels sprouts, trimmed and sliced
- Butternut squash, peeled and diced

Instructions
- Prepare the Ingredients: Trim and halve the Brussels sprouts, then peel and dice the butternut squash. Mince the garlic and set aside.
- Roast the Butternut Squash: Preheat your oven to 400°F (200°C). Toss the diced squash with olive oil, salt, and pepper, then spread it on a baking sheet. Roast for 20-25 minutes, stirring halfway through.
- Cook the Pasta: While the squash roasts, cook the pasta according to package instructions in salted water. Reserve a cup of pasta water before draining.
- Sauté the Brussels Sprouts: In a skillet, heat olive oil over medium heat. Add Brussels sprouts and cook for 5-7 minutes until browned. Add minced garlic and cook for another 1-2 minutes.
- Combine: Add drained pasta to the skillet with Brussels sprouts. Pour in vegetable broth, toss together with roasted butternut squash and a splash of reserved pasta water.
- Finish the Dish: Season with salt, pepper, and fresh herbs. Mix in grated Parmesan cheese or nutritional yeast.
- Serve Warm: Dish up the pasta, adding extra cheese and herbs as garnish. Enjoy with loved ones!
