- 2 eggs

Instructions
- Gather your ingredients. Open the canned salmon and let it drain. Flake the salmon with a fork.
- In a skillet, heat oil over medium heat. Sauté chopped onions and minced garlic until translucent.
- In a mixing bowl, combine the flaked salmon, sautéed onions, eggs, and breadcrumbs. Add herbs and season with salt, pepper, and cayenne if desired.
- Shape the mixture into patties.
- In the skillet, add more oil and carefully place patties. Cook for 4-5 minutes on each side until golden brown.
- Once cooked, place on a paper towel to absorb excess oil and serve warm.
