- 1 pound boneless chicken (breast or thighs)
- 4 cups chicken broth
- 2 cups dumplings (homemade or store-bought biscuit dough)
- 1 cup diced onions
- 1 cup diced carrots
- 1 cup diced celery
- 2 cloves minced garlic
- 1 tablespoon fresh thyme (or rosemary)
- 1/2 cup heavy cream
- Salt and pepper to taste
- 1 teaspoon paprika
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat butter over medium heat. Add chicken, season with salt and pepper, and cook until golden brown (5–7 minutes).
- Remove chicken; in the same skillet, add onions, carrots, and celery. Sauté for about 5 minutes until softened. Stir in garlic and herbs, cooking for 1 additional minute.
- Pour in chicken broth and bring to a simmer. Add heavy cream and mix well.
- Transfer the mixture to a large baking dish, placing the chicken back into the broth.
- Prepare dumplings and drop spoonfuls over the chicken and broth.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until dumplings are golden.
- Let cool for a few minutes before serving, then garnish with fresh herbs.
