Ingredients

  • 1 pound boneless chicken (breast or thighs)
  • 4 cups chicken broth
  • 2 cups dumplings (homemade or store-bought biscuit dough)
  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves minced garlic
  • 1 tablespoon fresh thyme (or rosemary)
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat butter over medium heat. Add chicken, season with salt and pepper, and cook until golden brown (5–7 minutes).
  3. Remove chicken; in the same skillet, add onions, carrots, and celery. Sauté for about 5 minutes until softened. Stir in garlic and herbs, cooking for 1 additional minute.
  4. Pour in chicken broth and bring to a simmer. Add heavy cream and mix well.
  5. Transfer the mixture to a large baking dish, placing the chicken back into the broth.
  6. Prepare dumplings and drop spoonfuls over the chicken and broth.
  7. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until dumplings are golden.
  8. Let cool for a few minutes before serving, then garnish with fresh herbs.
