Description

A comforting family dish featuring roasted spaghetti squash topped with a savory meat sauce and gooey cheese.


Ingredients

  • 1 spaghetti squash
  • 1 lb ground meat (beef, turkey, or sausage)
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups tomato sauce
  • 1 tablespoon olive oil
  • Fresh basil and oregano, to taste
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half and scoop out the seeds. Drizzle with olive oil, and season with salt and pepper. Place cut-side down on a baking sheet and roast for about 40-50 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add onion and cook until soft. Stir in garlic and sauté for another minute until fragrant.
  3. Add ground meat, breaking it up with a spatula. Season with salt, pepper, and herbs. Cook until browned.
  4. Pour in tomato sauce and simmer for about 10-15 minutes.
  5. Once squash is roasted, flip it and scrape out the strands. Combine them with the meat sauce in the skillet.
  6. Transfer to a baking dish, sprinkle with mozzarella and parmesan, and bake until cheese is melted and bubbly, about 15-20 minutes.
  7. Garnish with chopped herbs and serve warm.

Notes

For a vegetarian version, substitute the meat with lentils or mushrooms. Nutritional yeast can be used instead of cheese for a dairy-free option.
