A comforting family dish featuring roasted spaghetti squash topped with a savory meat sauce and gooey cheese.
Ingredients

- 1 spaghetti squash
- 1 lb ground meat (beef, turkey, or sausage)
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 cups tomato sauce
- 1 tablespoon olive oil
- Fresh basil and oregano, to taste
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Cut the spaghetti squash in half and scoop out the seeds. Drizzle with olive oil, and season with salt and pepper. Place cut-side down on a baking sheet and roast for about 40-50 minutes.
- In a large skillet, heat olive oil over medium heat. Add onion and cook until soft. Stir in garlic and sauté for another minute until fragrant.
- Add ground meat, breaking it up with a spatula. Season with salt, pepper, and herbs. Cook until browned.
- Pour in tomato sauce and simmer for about 10-15 minutes.
- Once squash is roasted, flip it and scrape out the strands. Combine them with the meat sauce in the skillet.
- Transfer to a baking dish, sprinkle with mozzarella and parmesan, and bake until cheese is melted and bubbly, about 15-20 minutes.
- Garnish with chopped herbs and serve warm.
Notes
For a vegetarian version, substitute the meat with lentils or mushrooms. Nutritional yeast can be used instead of cheese for a dairy-free option.
