Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup freshly grated parmesan cheese
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 1 cup sliced mushrooms (button or cremini)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley or thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Tenderize the chicken breasts slightly for even cooking.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced mushrooms and sauté until soft and lightly browned. Add minced garlic and cook for an additional minute. Remove from heat.
  4. In a bowl, mix together breadcrumbs, grated parmesan, herbs, salt, and pepper.
  5. Pat each chicken breast dry, brush with olive oil, and top with the mushroom-garlic mixture.
  6. Press the breadcrumb mixture onto the chicken firmly.
  7. Place the breaded chicken onto a parchment-lined baking sheet.
  8. Bake for 20–25 minutes until the internal temperature reaches 165°F (74°C) and the tops are golden brown.
  9. Let the chicken rest for a few minutes before slicing. Serve hot.

Avoid opening the oven door frequently; it can cause the temperature to fluctuate, affecting the crispiness of the crust.
