- 4 boneless, skinless chicken breasts
- 1 cup freshly grated parmesan cheese
- 1 cup breadcrumbs (plain or Italian-seasoned)
- 1 cup sliced mushrooms (button or cremini)
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley or thyme, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Tenderize the chicken breasts slightly for even cooking.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced mushrooms and sauté until soft and lightly browned. Add minced garlic and cook for an additional minute. Remove from heat.
- In a bowl, mix together breadcrumbs, grated parmesan, herbs, salt, and pepper.
- Pat each chicken breast dry, brush with olive oil, and top with the mushroom-garlic mixture.
- Press the breadcrumb mixture onto the chicken firmly.
- Place the breaded chicken onto a parchment-lined baking sheet.
- Bake for 20–25 minutes until the internal temperature reaches 165°F (74°C) and the tops are golden brown.
- Let the chicken rest for a few minutes before slicing. Serve hot.

Avoid opening the oven door frequently; it can cause the temperature to fluctuate, affecting the crispiness of the crust.
