An easy and flavorful recipe for crispy and juicy chicken thighs that brings family together.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Pat the chicken thighs dry with paper towels and season with salt, pepper, and paprika on both sides.
  3. In a cast iron skillet, heat olive oil over medium-high heat until shimmering.
  4. Place the chicken thighs skin-side down and sear for about 5-7 minutes until golden brown.
  5. Flip the chicken thighs over, add minced garlic, rosemary, and thyme, and cook for an additional minute.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  7. If desired, broil for 3-4 minutes to further crisp the skin.
  8. Remove from oven and let the chicken rest for 5 minutes before serving.

Notes

For best results, avoid overcrowding the skillet and ensure it’s hot enough before adding the chicken.
