- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Juice of 1 lemon
Instructions
- Preheat your oven to 400°F (204°C).
- Pat the chicken thighs dry with paper towels and season with salt, pepper, and paprika on both sides.
- In a cast iron skillet, heat olive oil over medium-high heat until shimmering.
- Place the chicken thighs skin-side down and sear for about 5-7 minutes until golden brown.
- Flip the chicken thighs over, add minced garlic, rosemary, and thyme, and cook for an additional minute.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
- If desired, broil for 3-4 minutes to further crisp the skin.
- Remove from oven and let the chicken rest for 5 minutes before serving.
Notes
For best results, avoid overcrowding the skillet and ensure it’s hot enough before adding the chicken.
