Description

Deliciously buttery shortbread cookies infused with dried cherries and almond extract, creating a perfect balance of flavors.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon almond extract
  • 1 cup dried cherries, chopped
  • 1/2 cup sliced almonds
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugar until light and fluffy in a mixing bowl.
  3. Mix in the almond extract.
  4. Gradually sift in the flour and salt, mixing just until combined.
  5. Gently fold in the dried cherries and sliced almonds.
  6. Roll the dough into small balls (about one tablespoon) and place them on the prepared baking sheet, spacing them apart.
  7. Flatten each ball slightly with the back of a fork.
  8. Bake for 12-15 minutes or until the edges turn golden brown, then allow to cool on the baking sheet before transferring to a wire rack.
  9. Enjoy with tea or coffee!

Notes

Ensure your butter is at room temperature for optimal creaming. Don’t overmix the dough to maintain a tender texture.
