Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugar until light and fluffy in a mixing bowl.
- Mix in the almond extract.
- Gradually sift in the flour and salt, mixing just until combined.
- Gently fold in the dried cherries and sliced almonds.
- Roll the dough into small balls (about one tablespoon) and place them on the prepared baking sheet, spacing them apart.
- Flatten each ball slightly with the back of a fork.
- Bake for 12-15 minutes or until the edges turn golden brown, then allow to cool on the baking sheet before transferring to a wire rack.
