- 1 ½ cups long-grain rice
- 1 lemon (juiced and zested)
- 4 cloves garlic (minced)

- 1 tablespoon fresh parsley
- 4 cups chicken broth
- 2 cups vegetables (such as carrots and peas)
- Salt and pepper to taste
Instructions
- Season the chicken with salt and pepper. Optional: marinate in lemon juice for a few hours.
- Sauté minced garlic in olive oil until fragrant.
- Layer rice in the slow cooker, followed by sautéed garlic and seasoned chicken.
- Pour in chicken broth, add lemon juice and zest, and herbs.
- Cook on low for 4-6 hours or high for 2-3 hours.
- Once cooked, shred chicken and stir to combine with rice and veggies.
- Garnish with fresh herbs and an extra squeeze of lemon before serving.
Notes
Allow the chicken to rest in the slow cooker for 10 minutes after cooking for maximum juiciness. Adjust seasonings just before serving to enhance flavor.
