- 6 large eggs
- 3/4 cup granulated sugar
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 teaspoon freshly grated nutmeg
- 1 teaspoon vanilla extract
- Optional: 1/2 cup bourbon or spiced rum
Instructions
- In a large mixing bowl, whisk together the eggs and sugar until pale and slightly thickened.
- In a saucepan over medium heat, combine whole milk and heavy cream, stirring until it steams but does not boil.
- Slowly pour about half of the hot milk mixture into the egg and sugar blend, whisking continuously to temper the eggs.
- Pour the tempered egg mixture back into the saucepan with the remaining milk and cream, cooking over medium heat while stirring until thickened (5-8 minutes).
- Remove from heat and stir in nutmeg and vanilla extract; add alcohol if desired.
- Let cool, then refrigerate for at least 4 hours or overnight.
- Stir before serving, garnishing with a sprinkle of nutmeg or cinnamon.
Notes
Use pasteurized eggs for safety if concerned about raw eggs. Can substitute ingredients based on dietary preferences.
