Ingredients

  • 6 large eggs
  • 3/4 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup bourbon or spiced rum

Instructions

  1. In a large mixing bowl, whisk together the eggs and sugar until pale and slightly thickened.
  2. In a saucepan over medium heat, combine whole milk and heavy cream, stirring until it steams but does not boil.
  3. Slowly pour about half of the hot milk mixture into the egg and sugar blend, whisking continuously to temper the eggs.
  4. Pour the tempered egg mixture back into the saucepan with the remaining milk and cream, cooking over medium heat while stirring until thickened (5-8 minutes).
  5. Remove from heat and stir in nutmeg and vanilla extract; add alcohol if desired.
  6. Let cool, then refrigerate for at least 4 hours or overnight.
  7. Stir before serving, garnishing with a sprinkle of nutmeg or cinnamon.

Notes

Use pasteurized eggs for safety if concerned about raw eggs. Can substitute ingredients based on dietary preferences.
