Ingredients

  • 1 onion, chopped

  • 2 carrots, diced
  • 2 celery stalks, diced

  • 4 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Brown the beef: In a large pot, heat a drizzle of olive oil over medium-high heat. Once hot, brown the ground beef until fully cooked, breaking it apart with a spoon. Drain any excess fat.
  2. Sauté the vegetables: Add the chopped onions and garlic to the pot, stirring until fragrant and onions are translucent, about 3-4 minutes.
  3. Add remaining ingredients: Toss in the diced carrots, celery, canned tomatoes (with juices), and beef broth. Stir in dried herbs, salt, and any other seasoning you love.
  4. Simmer and cook: Bring the mixture to a boil, then reduce the heat to medium-low. Cover and let it simmer for 30-40 minutes, allowing flavors to meld beautifully.
  5. Taste and adjust: Taste the soup and adjust seasoning as needed before serving.
  6. Serve and enjoy: Ladle the soup into bowls and garnish if desired. Serve hot with bread on the side.
