Description

A comforting dish where chicken is infused with the tangy sweetness of apple cider and earthy rosemary, perfect for family gatherings.


Ingredients

  • 4 bone-in chicken thighs or breasts
  • 1 cup apple cider
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 2 sprigs fresh rosemary
  • 2 carrots, cut into chunks
  • 2 potatoes, cut into chunks
  • 1 cup chicken or vegetable stock
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken with salt, pepper, and rosemary; pat dry.
  3. Heat olive oil in a skillet and sear the chicken skin-side down for 5-7 minutes.
  4. Remove chicken and sauté garlic and onion in the same skillet until fragrant.
  5. Add apple cider, scrape the skillet, and add stock with remaining rosemary; simmer for 5 minutes.
  6. Return the chicken to the skillet, add carrots and potatoes, and roast in the oven for 30-35 minutes.
  7. Allow to rest for 5-10 minutes before serving, then plate with sauce.

Notes

For a twist, substitute carrots with parsnips or sweet potatoes. Pair with a salad or creamy mashed potatoes for a complete meal.
