Ingredients

- 4 bone-in chicken thighs or breasts
- 1 cup apple cider
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 2 sprigs fresh rosemary
- 2 carrots, cut into chunks
- 2 potatoes, cut into chunks
- 1 cup chicken or vegetable stock
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken with salt, pepper, and rosemary; pat dry.
- Heat olive oil in a skillet and sear the chicken skin-side down for 5-7 minutes.
- Remove chicken and sauté garlic and onion in the same skillet until fragrant.
- Add apple cider, scrape the skillet, and add stock with remaining rosemary; simmer for 5 minutes.
- Return the chicken to the skillet, add carrots and potatoes, and roast in the oven for 30-35 minutes.
- Allow to rest for 5-10 minutes before serving, then plate with sauce.
Notes
For a twist, substitute carrots with parsnips or sweet potatoes. Pair with a salad or creamy mashed potatoes for a complete meal.
