Description

A creamy and flavorful side dish made with roasted garlic and butternut squash, perfect for family gatherings and holiday feasts.


Ingredients

  • 1 large butternut squash
  • 46 cloves garlic, unpeeled
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream or non-dairy milk
  • Salt and pepper, to taste
  • Fresh herbs (thyme, sage, or parsley)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and scoop out the seeds.
  3. Place the squash cut-side up on a baking sheet and nestle the unpeeled garlic cloves beside it.
  4. Drizzle with olive oil, and season with salt and pepper.
  5. Roast for about 45 minutes, or until the squash is fork-tender and the garlic is soft.
  6. Once cooled, scoop the flesh of the squash into a bowl and squeeze out the roasted garlic.
  7. Add butter, cream or milk, and fresh herbs, then mash until smooth and creamy.
  8. Taste and adjust seasoning as needed.

Notes

Experiment with spices like nutmeg or cayenne for additional flavor. Don’t rush the roasting to enhance sweetness.
