- 1 large butternut squash
- 4–6 cloves garlic, unpeeled
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream or non-dairy milk
- Salt and pepper, to taste
- Fresh herbs (thyme, sage, or parsley)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half lengthwise and scoop out the seeds.
- Place the squash cut-side up on a baking sheet and nestle the unpeeled garlic cloves beside it.
- Drizzle with olive oil, and season with salt and pepper.
- Roast for about 45 minutes, or until the squash is fork-tender and the garlic is soft.
- Once cooled, scoop the flesh of the squash into a bowl and squeeze out the roasted garlic.
- Add butter, cream or milk, and fresh herbs, then mash until smooth and creamy.
- Taste and adjust seasoning as needed.
Notes
Experiment with spices like nutmeg or cayenne for additional flavor. Don’t rush the roasting to enhance sweetness.
