- 1/2 cup raspberry preserves

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix the almond flour and powdered sugar together.
- In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the almond extract and a pinch of salt to the butter mixture and stir well.
- Gradually incorporate the dry ingredients into the wet mixture until it forms a soft dough.
- Scoop a tablespoon of dough, flatten it in your palm, and add half a teaspoon of raspberry preserves in the center. Fold the dough around the filling and roll it into a ball.
- Place the cookies on the baking sheet and bake for about 12-15 minutes, until the bottoms are slightly golden.
- Allow the cookies to cool for a minute before rolling them in powdered sugar, then transfer to a wire rack to cool completely.
