A colorful and healthier twist on the classic Philly cheesesteak, featuring bell peppers stuffed with seasoned beef, mushrooms, and gooey cheese.

- 4 large bell peppers (green or red)
- 1 lb ground beef (or lean ground turkey)
- 1 cup diced sweet onions
- 1 cup chopped cremini or button mushrooms
- 1 cup provolone or mozzarella cheese
- 1/2 cup cheddar cheese (optional)
- 2 teaspoons garlic powder
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds. Place them cut side up in a baking dish and drizzle with olive oil, seasoning with salt and pepper.
- In a skillet, heat olive oil over medium heat, add onions and sauté until softened, about 3-4 minutes.
- Add mushrooms, cooking until tender, then stir in the ground beef until browned.
- Season the mixture with garlic powder, paprika, and black pepper. Remove from heat and stir in half of the cheese.
- Spoon the beef mixture into each bell pepper, packing it gently.
- Top each pepper with the remaining cheese, then cover with foil.
- Bake for 20-25 minutes, remove the foil, and bake for another 10 minutes until cheese is golden and peppers are tender.
- Let cool slightly before serving.
Notes
Feel free to substitute ground beef with ground turkey or chicken for a leaner option. You can also customize cheeses and add your favorite spices.
