- 1 and 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 16 ounces softened cream cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Green food coloring
- Mint extract (optional)
Instructions
- In a bowl, combine graham cracker crumbs with melted butter and mix until evenly coated.
- Press the mixture into the bottom of mini cheesecake cups or a muffin tin lined with cupcake liners.
- In a large mixing bowl, beat cream cheese until smooth. Gradually add powdered sugar while mixing well.
- Add vanilla extract and mint extract if desired, then mix in a few drops of green food coloring.
- Spoon the cheesecake mixture into each cup over the crust, filling them about three-quarters full.
- Refrigerate for at least 2-4 hours, or until set.
- Once set, pop them out of the muffin tin and serve chilled, optionally topping with whipped cream or festive sprinkles.
Notes
Ensure cream cheese is at room temperature for a smooth filling. They can be made ahead of time and freeze well.
