Description

Delightful mini cheesecakes with a vibrant green hue and a burst of sweetness, perfect for the holidays. These fun desserts are sure to bring joy to any gathering!


Ingredients

  • 1 and 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 16 ounces softened cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Green food coloring
  • Mint extract (optional)

Instructions

  1. In a bowl, combine graham cracker crumbs with melted butter and mix until evenly coated.
  2. Press the mixture into the bottom of mini cheesecake cups or a muffin tin lined with cupcake liners.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add powdered sugar while mixing well.
  4. Add vanilla extract and mint extract if desired, then mix in a few drops of green food coloring.
  5. Spoon the cheesecake mixture into each cup over the crust, filling them about three-quarters full.
  6. Refrigerate for at least 2-4 hours, or until set.
  7. Once set, pop them out of the muffin tin and serve chilled, optionally topping with whipped cream or festive sprinkles.

Notes

Ensure cream cheese is at room temperature for a smooth filling. They can be made ahead of time and freeze well.
