Delicious chocolate cookies with a rich ganache filling that create lasting memories with every bite.
Ingredients

- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 egg yolk
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup chocolate (dark or milk) for ganache
- 1/4 cup heavy cream (or coconut cream)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened unsalted butter and granulated sugar until light and fluffy.
- Mix in the egg yolk, followed by the cocoa powder and flour. Stir until just combined.
- Scoop tablespoon-sized amounts of dough and roll them into balls. Place them on a parchment-lined baking sheet about two inches apart.
- Press down in the center of each ball to create an indentation for the ganache.
- Bake for 10-12 minutes, then allow to cool on the pan for a few minutes before transferring to a wire rack.
- Heat the heavy cream in a small saucepan until it simmers, then pour over the chocolate and let sit before stirring until smooth.
- Fill each thumbprint with ganache and let set before enjoying.
Notes
Add a pinch of sea salt on top of the ganache before it sets for an extra flavor contrast.
