Easy Chocolate Thumbprint Cookies with Ganache Filling

Description

Delicious chocolate cookies with a rich ganache filling that create lasting memories with every bite.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 egg yolk
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup chocolate (dark or milk) for ganache
  • 1/4 cup heavy cream (or coconut cream)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened unsalted butter and granulated sugar until light and fluffy.
  3. Mix in the egg yolk, followed by the cocoa powder and flour. Stir until just combined.
  4. Scoop tablespoon-sized amounts of dough and roll them into balls. Place them on a parchment-lined baking sheet about two inches apart.
  5. Press down in the center of each ball to create an indentation for the ganache.
  6. Bake for 10-12 minutes, then allow to cool on the pan for a few minutes before transferring to a wire rack.
  7. Heat the heavy cream in a small saucepan until it simmers, then pour over the chocolate and let sit before stirring until smooth.
  8. Fill each thumbprint with ganache and let set before enjoying.

Notes

Add a pinch of sea salt on top of the ganache before it sets for an extra flavor contrast.
