A heartwarming and nostalgic soup made with ground beef, potatoes, and vegetables, simmered to perfection in a Crock Pot.
Ingredients

- 1 lb ground beef (or turkey)
- 4 medium potatoes (Yukon Gold or Russet)
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups beef or vegetable broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup milk or cream
- 1 tsp fresh thyme
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Brown the ground beef in a skillet over medium heat, seasoning with salt and pepper. Drain excess fat.
- Chop the potatoes, carrots, and celery into small pieces.
- Place the browned meat in the Crock Pot along with the chopped vegetables, diced onion, and minced garlic.
- Pour in the broth and stir to combine.
- Add a splash of milk or cream and season with thyme and parsley.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Check the vegetables for doneness; they should be fork-tender.
- Before serving, stir in fresh herbs and optionally add sour cream or cheese.
Notes
For faster prep, frozen mixed vegetables can be substituted. Adjust seasoning gradually while cooking.
