Description

A heartwarming and nostalgic soup made with ground beef, potatoes, and vegetables, simmered to perfection in a Crock Pot.


Ingredients

  • 1 lb ground beef (or turkey)
  • 4 medium potatoes (Yukon Gold or Russet)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup milk or cream
  • 1 tsp fresh thyme
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat, seasoning with salt and pepper. Drain excess fat.
  2. Chop the potatoes, carrots, and celery into small pieces.
  3. Place the browned meat in the Crock Pot along with the chopped vegetables, diced onion, and minced garlic.
  4. Pour in the broth and stir to combine.
  5. Add a splash of milk or cream and season with thyme and parsley.
  6. Cook on low for 6-8 hours or high for 3-4 hours.
  7. Check the vegetables for doneness; they should be fork-tender.
  8. Before serving, stir in fresh herbs and optionally add sour cream or cheese.

Notes

For faster prep, frozen mixed vegetables can be substituted. Adjust seasoning gradually while cooking.
