Ingredients
- Salmon fillets (fresh or frozen)
- Panko breadcrumbs
- Bell peppers (sliced)
- Scallions (chopped)
- Avocado (sliced)
- Mayonnaise
- Sweet chili sauce
- Sriracha
- Fresh lime juice
- Rice or quinoa (for serving)
- Salt and pepper
- Garlic powder
Instructions
- Cut the salmon into bite-sized cubes for even cooking.
- Mix panko breadcrumbs with salt, pepper, and garlic powder. Dip each salmon cube in beaten egg and roll in the breadcrumb mixture.
- Heat oil in a skillet or preheat the oven to 425°F (218°C). Fry salmon bites for 3-4 minutes on each side or bake for 12-15 minutes.
- In a bowl, mix mayonnaise, sweet chili sauce, sriracha, and lime juice. Adjust the spice level to taste.
- Assemble your bowls with a base of rice or quinoa, top with crispy salmon, fresh veggies, and drizzle with Bang Bang sauce. Garnish with scallions and sesame seeds.
Notes
For added crunch, press the panko firmly onto salmon. Cook in batches to avoid overcrowding the skillet. Serve with garlic sautéed greens or a cucumber salad.
