- Lasagna noodles (no-boil or broken pieces)
- 1 jar creamy Alfredo sauce (or homemade: butter, heavy cream, Parmesan)
- 1 lb ground meat (Italian sausage or ground beef)
- 8 oz cremini or button mushrooms, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken or vegetable broth
- Fresh basil or parsley, chopped
- 1 tsp dried oregano
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot over medium heat, add olive oil and sauté the chopped onions and minced garlic for 3-5 minutes until translucent.
- Add the ground meat and cook until browned, breaking it up into smaller pieces.
- Stir in the chopped mushrooms and cook until soft.
- Pour in the Alfredo sauce and broth, stirring well, and bring to a gentle simmer.
- Stir in the noodles and cook for 10-15 minutes until tender, stirring occasionally.
- Turn off the heat and fold in the cheeses and herbs until melted.
- Serve in bowls garnished with extra cheese and basil.
Notes
Can be customized with spinach or crushed red pepper flakes for added flavor. Store leftovers in the refrigerator for up to three days or freeze before adding cheese.
