Description

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup fresh cranberries, roughly chopped
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1 pinch of salt

Instructions

  1. Rinse and sort the cranberries, discarding any bruised ones.
  2. In a medium saucepan, combine the cranberries and a few tablespoons of water over medium heat and cook until softened, about 5-7 minutes.
  3. In a large bowl, beat the room temperature butter until light and creamy.
  4. Gradually add in honey and vanilla extract, mixing until well-combined.
  5. Once the cranberries have cooled slightly, fold them gently into the butter mixture.
  6. Add a pinch of salt to enhance the flavors.
  7. Transfer to a decorative jar and serve immediately or store in the refrigerator for up to two weeks.

Notes

For a dairy-free option, use vegan butter. Maple syrup can replace honey for a vegan alternative.
