- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup creamy peanut butter
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 12 soft caramel candies
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together your flour, cocoa powder, baking soda, and baking powder. Set this dry mixture aside.
- In a larger mixing bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
- Mix in the peanut butter until well combined, then add the eggs one at a time, followed by the vanilla extract.
- Gradually combine the dry mixture with the wet ingredients, mixing until just combined.
- Scoop out heaping tablespoons of dough and roll them into balls, placing them on the prepared baking sheets about two inches apart.
- Bake for 10-12 minutes until the edges are firm but the centers are still soft.
- Remove from the oven, cool slightly, and gently press a caramel candy into the center of each cookie.
- Let them cool completely on a wire rack.
Notes
For a healthier twist, you can use whole wheat flour. Don’t skip the caramel; it elevates the cookie experience immensely.
