Ingredients

  • 2 cups cooked day-old rice
  • 2 eggs
  • 1 cup fresh vegetables (bell peppers, peas, carrots)
  • 1 cup sautéed shiitake or cremini mushrooms
  • 3 tablespoons soy sauce
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons cooking oil (preferably sesame oil)

Instructions

  1. Preheat your skillet or wok over medium heat and add a splash of oil.
  2. Add minced garlic and sauté until fragrant, being careful not to burn it.
  3. Add your mushrooms and vegetables of choice, sautéing until tender and vibrant in color.
  4. Push the veggies to one side, crack the eggs on the other side, and scramble until cooked through.
  5. Add the cooked rice, breaking apart any clumps, and stir everything together.
  6. Drizzle soy sauce over the mixture and stir-fry for a few minutes, allowing flavors to meld.
  7. Before serving, sprinkle chopped green onions on top for a fresh touch.

Notes

For extra flavor, add a sprinkle of sesame oil at the end. Avoid overcrowding the pan when cooking.
