Ingredients

  • 2 cups fresh vine-ripened tomatoes, halved
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp extra virgin olive oil
  • Balsamic reduction (optional)
  • 1 baguette, sliced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine tomatoes, 1 tbsp olive oil, salt, and pepper. Let marinate for 15 minutes.
  3. Blend goat cheese, minced garlic, and basil in a separate bowl until smooth.
  4. Spread goat cheese mixture in a baking dish, top with marinated tomatoes and a drizzle of olive oil.
  5. Bake for 20-25 minutes until bubbly and golden.
  6. While dip bakes, brush baguette slices with olive oil and toast in the oven for 5-7 minutes.
  7. Serve warm, drizzled with balsamic reduction if desired, alongside the toasted baguette slices.

Notes

For a creamier texture, mix in cream cheese or use ricotta. Substitute fresh basil with dried herbs like oregano or thyme if needed.
