Description

A unique dessert combining layers of cake and pecan pie, perfect for Thanksgiving celebrations.


Ingredients

  • 1 vanilla cake mix (or homemade using all-purpose flour, sugar, eggs, baking powder, and vanilla extract)
  • 1 cup chopped pecans (or walnuts/chocolate chips as substitutes)
  • 1 cup corn syrup
  • 1 cup brown sugar
  • 1/2 cup melted butter
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1/2 teaspoon sea salt
  • Cream cheese frosting (optional)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour your cake pans.
  2. Combine cake ingredients in a large mixing bowl until smooth. Divide the batter into two equal portions, pouring one into each pan.
  3. Bake for 25-30 minutes until a toothpick comes out clean. Let them cool completely.
  4. Prepare pecan pie filling by whisking corn syrup, brown sugar, melted butter, eggs, vanilla, and chopped pecans in a bowl.
  5. Once the cake layers are cool, place one on a platter, pour an even layer of pecan pie filling, then top with the second layer. Spread remaining filling on top and sides.
  6. If using, frost with cream cheese frosting and decorate with toasted pecans or chocolate shavings.
  7. Chill for an hour before serving. Slice generously and enjoy!

Notes

Allow adequate time for the cake layers to cool completely to prevent sogginess. Feel free to get creative with substitutions based on available ingredients.
