- 4 large eggs
- 2 cups fresh spinach, coarsely chopped
- 1/2 cup feta cheese, crumbled
- 1 tablespoon butter or olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Prep Your Ingredients: Wash the spinach and chop it coarsely. Crumble the feta cheese.
- Whisk the Eggs: Beat the eggs with a pinch of salt and pepper.
- Heat the Pan: Melt butter or olive oil in a non-stick skillet over medium heat.
- Sauté the Spinach: Add spinach to the skillet and wilt for about 2 minutes.
- Add the Eggs: Pour beaten eggs over the spinach and cook undisturbed for about 2–3 minutes.
- Add Feta: Sprinkle crumbled feta on top while eggs are still slightly runny.
- Fold and Finish: Fold the omelet in half and cook for an additional minute.
- Serve: Slide the omelet onto a plate and garnish with fresh herbs if desired.
Notes
You can substitute feta cheese with goat cheese or cheddar. Frozen spinach can be used if fresh is not available.
