Ingredients

  • 4 large eggs
  • 2 cups fresh spinach, coarsely chopped
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon butter or olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep Your Ingredients: Wash the spinach and chop it coarsely. Crumble the feta cheese.
  2. Whisk the Eggs: Beat the eggs with a pinch of salt and pepper.
  3. Heat the Pan: Melt butter or olive oil in a non-stick skillet over medium heat.
  4. Sauté the Spinach: Add spinach to the skillet and wilt for about 2 minutes.
  5. Add the Eggs: Pour beaten eggs over the spinach and cook undisturbed for about 2–3 minutes.
  6. Add Feta: Sprinkle crumbled feta on top while eggs are still slightly runny.
  7. Fold and Finish: Fold the omelet in half and cook for an additional minute.
  8. Serve: Slide the omelet onto a plate and garnish with fresh herbs if desired.

Notes

You can substitute feta cheese with goat cheese or cheddar. Frozen spinach can be used if fresh is not available.
