Instructions
- Cream the softened butter with granulated and brown sugars until light and fluffy.
- Beat in the eggs one at a time and mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually incorporate into the wet ingredients until just combined.
- Divide the dough into two or three equal parts and roll into logs about 1.5-2 inches thick. Wrap in plastic and refrigerate for at least two hours.
- Preheat your oven to 350°F (175°C). Unwrap the chilled dough, slice into ¼-inch rounds, and shape hearts with a cookie cutter if desired.
- Place on a lined baking sheet and bake for 10-12 minutes until edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
