Ingredients

  • 4 Salmon Fillets (skin-on preferred)
  • 1 cup Orzo
  • 2 Garlic cloves, minced
  • 1 cup Cremini mushrooms, sliced
  • 2 cups Vegetable or Chicken Broth
  • 1 Lemon (zest and juice)
  • 1/4 cup Fresh parsley or dill, chopped
  • 2 tbsp Olive Oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Start by chopping garlic and slicing mushrooms. Zest and juice your lemon, and prepare your herbs.
  2. Cook the Mushrooms: In a large skillet, heat olive oil over medium heat. Add the mushrooms and sauté until golden brown, around 5 minutes.
  3. Add Garlic: Stir in the garlic and cook for another minute, just until fragrant.
  4. Add Orzo: Mix the orzo into the skillet, stirring to combine.
  5. Add the Broth: Pour in the broth along with the lemon zest and bring to a gentle boil. Lower the heat, cover, and simmer for 8-10 minutes until the orzo is tender, stirring occasionally.
  6. Prepare the Salmon: Season the salmon fillets with salt and pepper.
  7. Cook the Salmon: Nestle the seasoned salmon into the skillet, squeeze lemon juice over everything, cover, and steam for about 7-10 minutes until the salmon is cooked through.
  8. Finish with Herbs: Remove from heat and stir in freshly chopped herbs. Serve hot!

Notes

Feel free to swap salmon for trout or chicken, and orzo for quinoa for a gluten-free option.
